How we get clever with our waste, and more.

We’re back for part two, as we explore our sustainable bakery mission.

Lots of local love here
It’s no secret that we’re big fans of a local-first approach (you can read a little more about some of our favourite producers here). Where we can, we choose to use ingredients from the South Coast — not only are they seasonal, as fresh as can be and from a trusted and known source, but they’re promoting fewer food miles. Basically, your food doesn’t have to travel as far, significantly reducing its carbon footprint.
Even our retail shelves and fridge are stocked with goods that have been approved by our team — for their flavour and local love.
It’s a vital part of community, supporting other local, small businesses and working together to look after this beautiful place.
We’ve been working closely with Growing Together, using plenty of fresh produce (particularly in the weekly salads) and donating our compost and coffee grounds to their heap. Keep an eye out for more about our upcoming food audit, too.
And choosing the best we can the rest of the time
Dedicated to high-quality ingredients, there are some inputs (like flour) that we need to source from a little further afield.
We only use sustainably-sourced Australian flour because we believe it’s essential to our bakes and our beliefs. Explore an all-organic option (with Australian flours) in the Organic Spelt Loaf.
We get clever with our waste
It’s our goal to sell out each day (or close to), but when we do have leftover sourdough loaves and pastries, we get clever.
The perfect way to repurpose sliced bread is to turn it into sourdough toasties — so that’s exactly what we do. And the famous Almond Croissants and Twice-Baked specials? They rely on day-old croissants for that crispy, delicious finish.
We donate loaves to the school breakfast clubs, and frequently drop off treats to the hospital and other community organisations. So nearly nothing goes to waste!
And we’ve got a bunch of lucky pigs on our roster, too. Let’s just say they’ve got very advanced palates and excellent taste.
On top of all that, we’ve got a few community-based ideas up our sleeves — to assist in waste collection and recycling. We’re toying with them at the moment, and you’ll be among the first to hear.
