Why We Bread Bag

It’s our top way to store sourdough for even greater returns (and more deliciousness).

While longer-lasting than yeasted bread, sourdough still requires care to prolong its life on your kitchen bench. We want to enjoy that flavour and crumb for an always-good experience. 


Follow this rule: Freeze for the long-term (if you’re not consuming within 4-5 days). Store correctly for the short-term.


The idea is to create a habitat that keeps the loaf fully covered, but not suffocated, letting the natural acids in sourdough prevent early drying out and mould. A paper bag — how we pack up your sourdough at Lagom Bakery — will do a good job, and a dedicated breadbox will too.


But our favourite way, and hottest sourdough storage tip, is to wrap it up in a cotton or linen bread bag.



Why Use a Bread Bag? 

The fabric bread bag helps maintain that perfect balance of moisture — too much, and the sourdough goes soggy (for example, using a plastic bag); too little, and it quickly stales (i.e. leaving the loaf uncovered on the bench). The moisture slowly escapes here, keeping the crumb delicate and delicious, and the crust actually crusty.


They’re sustainable, too, endlessly reusable and durable. We love being greeted with a big bread bag in the shop, ready to cocoon a sliced or unsliced sourdough loaf. Although we chuck our paper waste in the recycling or compost, we’re big fans of the ‘reduce’ mentality — avoiding the need as much as possible.

How to Use a Bread Bag Correctly

For best results:

  • Keep your bag on the bench, at room temperature. Make sure it’s a cool and dry spot!

  • Secure the top, either by folding it over or pulling the drawstrings.

  • If you’re slicing as you go, place the cut side down as you bag it.

  • Avoid direct sun and other heat-intense spots, like near the oven.

  1. Store fruit and vegetables. An extra produce bag never goes astray!

  2. Lunch holder. Move over plastic lunchboxes, we’re turning up to work with a cute cotton carrier to tote our meals around.

  3. An ice pack. Your DIY option, particularly in this summer heat. Pop a bag of frozen peas inside to cool down or ice that bruise.
